Avocado Toast with Arugula + Egg
I have to admit that I am frequently out of my house from 6am until 930pm and I just can't think about cooking dinner when I get home. That's when I resort to the well balanced, amazing Boosted Avocado Toast. I add 1 handful of Arugula greens for a boost of nutrients and fiber but feel free to add your greens of choice (taste great with spinach and baby kale too!), and eggs for some protein. This takes under 5 minutes to prepare and it's so satisfying! If you haven't picked up on this avocado toast fad, it is about time you give it a try!
1 slice Ezekiel Sprouted Whole Grain Bread
1 handful of your favoite greens (I used GothamFarms Arugula)
1 whole egg + 1 egg white
Basil and black pepper
1. Toast bread.
2. While bread is toasting, scramble or hard boil 4 egg whites with basil and pepper.
3. Mash ¼ avocado on top of toast. Add greens on top and then eggs.
