Greek Yogurt Almond Oatmeal Pancakes


I LOVE BRUNCH! And I don't know anybody who doesn't. I usually go for a veggie omelet of some kind but once in a while I crave a pancake or french toast. I wanted to make a healthier and tasty version and these came out divine. These homemade easy, greek yogurt almond oatmeal pancakes are fluffy, delicious, healthy, and add a protein boost so you won't be hungry a 1/2 hour later. Enjoy!

This recipe makes about 5 medium size pancakes, serves 2.

Ingredients:

1/4 cup Bob's Red Bill almond meal/flour

1/2 cup oat flour (grind up ½ cup oats)

1 cup blueberries

7oz FAGE 2% greek yogurt

2 eggs (1 white only, 1 whole)

2 teaspoon avocado oil

Directions: Mix well, sauté in 2 tsp avocado oil and enjoy!
