Vegan Cauliflower Pizza

A heart healthy, low carbohydrate, dairy-free, gluten-free, plant based meal that is sure to be a win with the whole family!

Vegan Cauliflower Pizza

· 1 large cauliflower head

· 2 tablespoons chia seeds

· 1 tablespoon flax seeds

· 1 cup almond meal

· ½ teaspoon garlic

· ½ teaspoon oregano

Pizza toppings

· ½ cup broccoli

· 2 roasted garlic cloves

· ½ cup non-dairy cheese (I chose Daiya shreds)

1) Preheat the oven to 400F and line a baking sheet with parchment paper.

2) Cut cauliflower into even sized pieces and steam until fork tender, about 10 minutes.

3) Carefully pulverize cauliflower in a large food processor until a fine rice-like texture is created. Cool in the freezer for about 10 minutes.

4) Create chia eggs by adding 2 tablespoons chia seeds to about 4 tablespoons of water and let sit until thickened.

5) Once the cauliflower is cooled, drain the liquid via pressing the pulverized cauliflower between two paper towels.

6) Add all the crust ingredients into a large mixing bowl and combine into a dough like texture (if extra water is needed to help form the dough, add 1-2 tablespoons at a time to avoid excess moisture).

7) Spread the dough onto parchment paper and cook for about 40 minutes until golden brown.

8) Carefully remove the baking sheet from the oven and add desired toppings. Cook for another 10-15 minutes until edges are crispy and “cheese” has melted.
